Like every year we got to October period that best represents our kitchen and our territory. Autumn is a wonderful season for the Roman cuisine, come the artichokes, the former are Sardinia, then come Puglia, Latin, and finally Cerveteri, Maccarese, to the delight of lovers of Cimaroli Romanesco.
In addition to the artichokes, come the “beautiful” Puntarelle, and both will be used in appetizers, in pasta, artichokes and clams or chicory with fresh anchovies and Pecorino, while for the latter, the Shredded fillet with sautéed artichokes or the salt cod with grilled artichokes, precisely.
For the nostalgic return oxtail and finally there are our Pere the “Belle Helene” with chocolate “Callebaut” to 57%, serious stuff.
